In stir-frying, Kikkoman Shoyu contributes a deep umami and savory base flavor that caramelizes slightly with high heat. As a dipping sauce, its flavor is more direct and brighter, enhancing the natural taste of the food without significant alteration from cooking.

To create a versatile dipping sauce, Kikkoman Shoyu can be combined with rice vinegar for tang, a touch of sugar or mirin for sweetness, grated ginger or garlic for aroma, and sesame oil for nutty depth. Adjust ratios to taste.

For udon, Kikkoman Shoyu is excellent in warm, savory broths or as a base for thick stir-fries. For somen, which is lighter and often served chilled, Kikkoman Shoyu is ideal diluted with dashi, mirin, and sugar to create a refreshing tsuyu dipping sauce.
