Itsuki Inaka Somen is made using water from the Aso subsoil and is slowly dried to bring out its firmness, taking time to mature and roll. Itsuki Inaka Somen is made by taking time for maturing and rolling and is characterized by its firmness. It is matured slowly over a long period of time through long maturation and drying (three stages: preliminary, main, and finishing).
