Kurata Setouchi Hiyashi Chuka noodles are made from flat noodles unique to the Setouchi Bingo area and have a chewy texture. The key to the soup is the secret ingredient, soy bean sauce, blended with Setouchi lemon juice, yuzu and kabosu, which goes perfectly with the sesame oil.

Enjoy Setouchi chilled chuka like a vegetable salad with lots of vegetables of your choice. The Seto Inland Sea is rich in seafood and mountain produce and scenic beauty. Setouchi lemons grown on the islands of this region are used in abundance. Serve with shredded steamed chicken, spring onions, cucumber, egg rolls, nori or tomatoes, bean sprouts and red ginger to taste.
