How to make delicious sushi rice

Ingredients

  • ★ If you have Sushi Vinegar:
  • 450g Rice, 90ml Sushi Vinegar
  • 600g Rice, 120ml Sushi Vinegar
  • ★ To make suitable Sushi Vinegar if it is not available:
  • 450g Rice, 60ml Vinegar, 3 tablespoons Sugar, 1 tablespoon Salt
  • 600g Rice, 80ml Vinegar, 4 tablespoons Sugar, 1 tablespoon + 1 teaspoon Salt

Instructions

  • Cook the rice with a little less water than usual. Prepare the vinegar while the rice is cooking.
  • When the rice is cooked, transfer it to a sushi bowl or a large, heat-resistant bowl and add the sushi vinegar.
  • Mix the vinegar into the rice from the bottom to distribute the vinegar everywhere. Spread the rice vertically and horizontally. When finished, use a fan or similar to blow air over the rice to remove moisture and create a sheen/gloss.
  • Carefully mix, turning the top and bottom of the rice one last time. Be careful not to spend too much time mixing, as you will lose the rice's luster.
