Korean Style Fish cakes Oden (어묵)

Ingredients
- 1 package of Korean fish cakes (4 square type fish cakes)
- 4 cups of anchovy broth
- 2 boiled eggs (optional)
- 1 cup of daikon radish, cut into thick slices
- 1 cup of boiled vegetables such as cabbage, carrots, and mushrooms
- Soy sauce and Korean red pepper flakes (gochugaru) for seasoning
- Chopped green onions for garnish
Preparation
- Prepare all the ingredients by boiling the eggs, daikon radish, potatoes, sweet potatoes, rice cakes, and vegetables until they are cooked through.
- Cut the wide fish cakes into two long strips (or fold into thirds) and Skewer them onto wooden skewers in a zigzag pattern.
- In a large pot, bring the anchovy broth to a simmer over medium heat.
- Add the skewered ingredients to the pot of simmering broth.
- Season the broth with soy sauce and Korean red pepper flakes to taste. Start with a small amount and adjust according to your preference for spiciness.
- Let the oden simmer gently for about 15-20 minutes, allowing all the flavors to meld together.
- Once everything is heated through and well-flavored, serve the Korean Style Fishcake Oden skewers hot in bowls, garnished with chopped green onions.
