Japanese Sake and Ginger Cocktail

Ingredients
- 60ml (2 oz) Premium Japanese Sake (Nihonshu, chilled)
- 15ml (1/2 oz) Fresh ginger juice (from about a 2-inch piece of ginger)
- 15ml (1/2 oz) Freshly squeezed lime juice
- 10ml (1/3 oz) Simple syrup (adjust to taste)
- 60ml (2 oz) Sparkling water or club soda (chilled)
- Ice cubes
- Garnish: A thin slice of fresh ginger, a lime wheel, or a mint sprig
Instructions
- Prepare the fresh ginger juice: Grate a fresh piece of ginger finely using a ceramic grater or fine zester. Squeeze the grated ginger pulp tightly over a small bowl to extract the juice.
- In a cocktail shaker, combine the chilled Sake, fresh ginger juice, fresh lime juice, and simple syrup.
- Add a handful of ice cubes to the shaker. Seal the shaker and shake vigorously for about 10-15 seconds to chill and mix the ingredients thoroughly.
- Fill a rocks glass or highball glass with fresh ice cubes.
- Strain the mixture from the shaker into the prepared glass.
- Top the cocktail with the chilled sparkling water or club soda. Stir gently with a bar spoon to integrate the layers without losing the carbonation.
- Garnish with a thin slice of fresh ginger and a lime wheel. Serve immediately.
