Udon: A Hug in a Bowl

Ingredients
- 300g Fresh or Frozen Udon Noodles
- 600ml Dashi Broth (or 600ml water + 1 dashi packet/teaspoon granules)
- 3 tablespoons Soy Sauce
- 2 tablespoons Mirin
- 1 teaspoon Sugar (optional, to taste)
- 1/4 cup Sliced Green Onions (for garnish)
- 2 slices Narutomaki (Japanese fish cake, optional)
- 2 tablespoons Tempura Flakes (Tenkasu, optional)
- Shichimi Togarashi (Japanese seven-spice, optional)
Instructions
- Prepare Dashi Broth: In a medium pot, combine dashi broth (or water and dashi granules/packet). Bring it to a gentle simmer over medium heat.
- Season the Broth: Add the soy sauce, mirin, and optional sugar to the simmering dashi. Stir well until the sugar dissolves. Keep the broth warm over low heat.
- Cook Udon Noodles: In a separate large pot, bring plenty of water to a rolling boil. Add the udon noodles and cook according to package instructions (fresh udon usually takes 1-2 minutes, frozen 2-3 minutes). Drain thoroughly.
- Assemble and Serve: Divide the cooked udon noodles among serving bowls. Ladle the hot dashi broth over the noodles.
- Garnish: Garnish generously with sliced green onions, narutomaki, tempura flakes, and a sprinkle of shichimi togarashi, if desired. Serve immediately and enjoy.
