Wel-Pac Premium ITO Genkai Wakme, dried seaweed kelp. Wakame seaweed has a mild slightly sweet taste from sea. Wakame setang is widely used in Asian cuisine, especially Japanese and Korean cuisine and it is an umami and spicy flavor source. Wakame is very rich in fiber and is used in many Japanese dishes for soups, salads, meat and vegetable dishes. Directions: Cut desired amount of wakame to be used and soak in cold water for 4 to 6 minutes, or until rehydrated and desired tenderness is reached. Drain well. Add to soups and salads as desired. Miso Soup with Wel Pac Premium ITO Wakame 1 bag of dashi-no-moto (soup stock base) 3 tablespoons red miso 1/4 pound firm tofu, drained and cut into small cubs 1/4 ounce Wel Pac Wakame, cut into 1/2 inch length, about 1/3 cup and rehydrated as directed above 2 tablespoons chopped fresh or 1 tablespoon freeze dried chives 1. Bring 4 cups of water to a boil in a medium saucepan. Add unopening bag of dashi-no-moto or a soup stock base. 2. Return to a boil, then reduce heat. Cover and simmer for 10 minutes. 3. Remove dash-no-moto bag when it is used instead of soup base. Add red miso to dash stock and stir until miso dissolves completely. 4. Add tofu, wakame and chivies. 5. Heat thoroughly. Serve while hot. Makes 3 to 4 servings.
