In Japan, sake has been around for centuries.

In Japan, sake has been around for centuries. The drink is made from special sake rice. The rice is polished to remove the outer layer of the grains and release the starch more easily. This starch is needed to extract alcohol during fermentation. After polishing, the rice is steamed. A Japanese mushroom called koji-kin is added to the cooled rice. This mushroom that gives sake its unique flavor. Finally, water and yeast are added to the rice and the mixture is left for a month. The rice mixture is then pressed, the liquid filtered, pasteurized and bottled.

Which Sake should I buy?

If you're a beginner, start with the sweet Amaguchi, which has a similar acidity to white wine. Just as you wouldn't recommend cheap boxed wines to first-time wine drinkers, it's better to start with high-quality ginjo or daiginjo sake rather than cheap futsushu. Nigori and namazake are also popular drinks for people who are not good with alcohol, so it's great for first-timers! Avoid dry karaguchi as the first drink. As you become accustomed to sake, you may find sake with a drier flavor, but Karaguchi sake can be a bit strong for first-timers.

“Tokuri” and “Ochoko” set

If you've bought sake, it's time to enjoy the fruits of your efforts with a glass of sake. However, it takes a little more effort to get the most from sake. Crafted with creative craftsmanship, ochoko (sake cup) and tokuri (small sake bottle) come in a variety of shapes, sizes, colors and materials, allowing you to express your individuality. For cold sake, small ochokos made of porcelain, metal or glass are recommended. When drinking hot sake, use porcelain or ceramic ochoco rather than glass or metal. Drinking sake from wine glasses is becoming more common these days, so you don't need to buy ochoco separately!

How to drink sake

How to drink cold sake : If you want to drink sake cold, place the bottle in the refrigerator about an hour before drinking. Alternatively, you can pour the amount of sake you want to drink into the tokuri and let it cool.

When drinking hot sake, soak the tokuri in boiling water for a few minutes. This will ensure that your sake is warm enough to drink right away! Do not boil water while the tonkuri is soaked. Try warming it up in water at different temperatures!

Room temperature sake : Of course, sake at room temperature is also delicious. Sometimes room temperature sake is better, so drink it as soon as you get home! Each sake has a different suitable temperature, but usually honjojo is served hot and daiginjo is served cold. When purchasing alcohol, ask the staff about the recommended drinking method.

Sake is all about fun. So, if you have your own way of drinking sake, feel free to eat it! However, for those new to sake, we recommend drinking slowly and in small portions, savoring the taste and aroma. Sake can be drunk as is, so don't mix it with alcohol or anything else! It is important to serve with food and water, so prepare otsumami and drink water. Sake is notorious for a bad hangover the next day, so don't drink too much!
