IH Induction compatible earthen pot Togusa

This traditional Banko-yaki earthenware pot is the most widely used in Japan. Its excellent heat resistance allows food to cook slowly, bringing out the best flavor of the ingredients. The earthenware pot's appearance becomes more beautiful with each use, making your everyday dishes even more delicious.

Banko ware (Manko Ware) is a Yakimono from Yokkaichi, Mie Prefecture, which is designated as a traditional craft. It is made of feldstone (petalite) and has excellent heat resistance.

For families who want to enjoy pots and pans even in induction. There are various types of IH-compatible earthenware pots, but this one has been heat-treated inside the pot at a domestic factory, making it safe and easy to use.

The coating also eliminates the need for a sealer. While the unique texture of ceramics is maintained, the inside has a three-layer structure with a metallic layer that is heated by the magnetic field lines of IH and a ceramic coating for protection.

The product can be used over an open flame and in an oven, but be careful not to burn it, as it may not generate heat if it gets burnt. This product can not be used in a microwave. The metal layer inside the donabe or ceramic coating may be peeled off or deformed.

Heat is transmitted slowly, making simmered dishes tasty.

Cooking in earthenware pots tastes better because the heat is transmitted slowly, allowing the sweetness and flavor of the ingredients to be slowly brought out. It is recommended for cooking stews and other dishes.

Craftsmanship from the perspective of the cook

The inside of the pot is colored white to make it easy to see the color of the ingredients, showing the care taken by the craftsman in the smallest details. Earthenware pots that gain in texture as they are used more and more

How to take care of earthenware pots before the first use

Meets the requirements of the "Meze-Stop" method. Earthen pots have many fine pores.
If the pot is used as it is, it may crack or leak in the weakened areas, or it may cause odors to seep into the pot.
For this reason, the first step is to seal the pores with a sticky starch such as potato starch.

※ Procedure for sealing
1】First, wash the earthenware pot well. Fill the pot about 1/8th of the way with water.
2】Add about 1/5 of the potato starch to the water and mix well.
3】Boil slowly over low heat without a lid.
4】When the water has boiled sufficiently, turn off the heat and allow to cool for about an hour.
5】When the earthenware pot has cooled, discard the contents and rinse well.
6】Wipe off the water and dry the pot in a well-ventilated place.

How to take care of earthenware pots after use

Earthen pots absorb a lot of water, so to avoid odors and scorching, wash the pot as soon as possible after cooking. After washing, turn the pot upside down to dry so that the bottom of the pot can dry easily. Leave them in a well-ventilated place overnight before putting them away in a cupboard or box.
